Contagion (that disease came from germs/filth) was little-understood, so people lived in dirty conditions that promoted illness. 'Bleeding' people to cure fever was disproven as of 1839, but no doubt many in the countryside still practiced it. There was no Food and Drug act, to ensure purity in these.
